Chapter 13: Lipids
Lipids in food and in the body include triglycerides, phospholipids, cholesterol, and a few others, for example vitamins A, E, and K. Triglycerides mainly provide an energy source and are the primary lipid in adipose tissue. Phospholipids and cholesterol form cell membranes and are involved in other cell functions. In veterinary medicine, cholesterol concentration is routinely determined on many small animal serum biochemical profiles. Triglyceride concentration can be determined as well, but may not be routinely measured.
